- INGREDIENTS
- 1/3 cup rolled oats
- 1/3 cup unsweetened almond milk
- 1/2 zucchini(grated)
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon hemp seeds
- 1/2 teaspoon ground flax seeds
- 1/3 cup water
- 1/3 banana(mashed)
- 1 teaspoon desiccated coconut
- handful of berries of choice
- METHOD
- Soak the oats in water in a bowl for around 5-10mins until soft
- Add the grated zucchini, cinnamon, hemp seeds, ground flax, mashed banana and almond milk to the bowl and mix it until it has a loose glugly and stodgy consistency.
- gently fold the berries in, careful not to let them bleed to much and spoon the oat mixture into an oven safe ramekin and bake until the centre is warm.
- pull oats from oven and sprinkle the coconut onto the the top of the oats and return to oven until the surface has turned golden brown and toasty.
- enjoy with a spoonful of nut butter and almond milk on the side or with fresh fruit and yoghurt.
